2 cups whole-wheat pastry flour
2 cups oat bran
4 teaspoons baking powder
3/4 cup raisins (optional)
3/4 cup chopped walnuts (optional)
1 teaspoon ground cinnamon (optional)
2-1/4 cups unsweetened apple juice
1 large cut-up apple
Preheat the oven to 350 degrees F.
Add all dry ingredients together in a large mixing bowl. Add the optional ingredients if using. Add the wet ingredients and stir until just mixed. Spoon the batter into sixteen to eighteen nonstick muffin cups (depending on how large you like your muffins) and bake for 35 minutes or until lightly browned.
Drizzle with agave, honey, or maple syrup to add sweetness once they come out of the oven.
Allow muffins to cool for five minutes before diving in to eat.
