These bars are great if you need a filling, super healthy on-the-go snack. They are similar to cookies, you can't taste the beans, and they're loaded with protein, fiber, and calcium. Enjoy them with a tall glass of almond milk.

Ingredients
1 (14 ounces) can butter beans, drained and rinsed
1 cup almond butter, unsalted
6 large (ripe and squishy) Medjool dates, pitted
1 Tablespoon cinnamon
1 Tablespoon vanilla extract
1 teaspoon baking powder
3 Tablespoons maple syrup (add more for extra sweetness)
1/2 teaspoon salt
1 cup Gluten-free oat bran
2/3 cup brown rice flour
3/4 cup non-dairy chocolate chips (optional)
Directions
Preheat oven to 350 dF.
Coat a 9 x 13 casserole dish with a nonstick spray.
Put the beans, dates, and almond butter in a high-speed blender or food processor and blend until it's mixed well and chopped thoroughly.
Pour this mixture into a large bowl.
Add in all other ingredients EXCEPT chocolate chips. Stir well for a few minutes. Add in chocolate chips and mix well again.
Pour all of the batter into the casserole dish. Flatten with your hand or a spatula until the batter is distributed evenly in the dish.
Bake 15 - 20 minutes on 350 dF.
Let cool for a few minutes before cutting into rectangular bars with a flat, metal spatula.
