Carrot Dogs: The Healthy, Delcious Version (WFPBNOGF)

You can make these Carrot Dogs in a panini press, or grill them up at a summer block party!

Yields

If my carrots are skinny, I will combine 3 in a hot dog bun!

Ingredients

2 long, straight carrots (hot dog length and size, but not too long or two thick)

1 teaspoon liquid smoke

2 whole wheat hot-dog buns, or 2 slices whole-grain bread (Ezekiel Low-Sodium brand is our favorite)


Fixings:

  • Spinach--cooked and drained, or fresh
  • Ketchup
  • Mustard
  • Sauerkraut
  • Caramelized Onions  (Optional, if you like them. We like our onions raw.)

Directions

  • Preheat a panini press, or heat an outdoor grill.
  • Bring a large pot of water to a boil. Add the carrots and boil for 10 to 15 minutes, or until they are hot dog-like soft. Stick a knife or fork in one to be sure.
  • Drain the carrots, cut them in half lengthwise, and rub liquid smoke on all sides with a knife or your finger. 
  • Place the carrots flat in the panini press or on the grill, and grill until lightly browned, just a few minutes. If space allows, put the bread or bun, opened, alongside the carrot to toast it a little.
  • Place the carrot in the bun and top with the spinach, ketchup, and mustard. Finally, add some sauerkraut and Caramelized (or Raw) Onions. 

Can you believe it!? This is the healthiest Carrot Dog on the planet! Easy too and delicious!
