Carrot Fruitcake (WFPB)

Preheat oven to 300 degrees. Use silicone bread pans so as not to have to grease loaf pans.

45 minutes

Yields

2 small loaves

Ingredients

1 cup grated carrots

1 cup raisins

3/4 cup honey

1 teaspoon cinnamon

1 teaspoon allspice

1 teaspoon sea salt

1/2 teaspoon nutmeg

1/4 teaspoon cloves

2 tablespoons Earth Balance stick

1-1/2 cups water

1-1/2 cups whole wheat flour

1 teaspoon baking soda

1/2 cup wheat germ

1/2 cup chopped walnuts

Directions

Cook carrots, raisins, honey, Earth Balance, and spices in the water for 10 minutes, then allow to cool

Mix together the flour, baking soda, wheat germ, and walnuts and combine with the other ingredients. Pour into two small, well-greased or silicone loaf pans.

Bake.

Notes

this bread is mois, rich, and spicy--a favorite for festive occasions.
