Chocolate-filled and Lime-Kissed Strawberries (WFPBNOGF)*

These are fun to make, absolutely beautiful to look at, and incredibly delicious. It would be hard to make too many! Probably the clever thing to do is limit how many each person gets. Best of all, these are only banana-sweetened; no other sweetener is used. The riper the banana, the sweeter the chocolate puree--so save those ripe old leopard-spotted wonders!

Makes 12 Strawberry Treats

Ingredients

12 large strawberries

1 very ripe banana

1 tablespoon unsweetened ocoa

2 teaspoons chocolate balsamic vinegar (optional)

Lime zest or mint leaves, for garnish

Directions

Slice the top off the strawberry, and then slice the tip off the bottom so the strawberry can stand on its own.

With a sharp parting knife, preferably serrated, carefully cut out the white core.

In a small food processor (if possible), puree the banana, cocoa, and chocolate balsamic vinegar, if using. Be sure to scrape down the sides so the puree is very smooth. With a small spoon, fill each strawberry with the chocolate puree.

Sprinkle lime zest or the mint leaves on the top of each strawberry.
