Make sure you have vegan sour cream on hand or see that recipe on this website and make first. It's easy and the result is delicious in this salad.
Cover and refrigerate until chilled, preferably overnight.
2 cups pitted dated, chopped
2 red apples, chopped
4 cups carrots, shredded coarsely
1 teaspoon orange rind, grated
2 tablespoons fresh orange juice
1/2 to 1 cup vegan sour cream (see that recipe)
1/4 teaspoon salt
Mix chopped dates, apples, shredded carrots, and orange rind in mixing bowl. Add orange juice, vegan sour cream, and salt. Cover and refrigerate until chilled.
Great Additions:
You can even try adding a nutty trail mix for a more unique taste.
