FOR THE SALAD
6 cups salad greens (choose kale, lettuce, chard or whatever you have)
1 red onion, diced
1 red bell pepper, seeded and diced
1/2 cup cherry tomatoes, quartered
1 large cucumber, sliced
1/4 cup chopped black olives
1/4-1/2 cup pine nuts or chopped walnuts
FOR THE DRESSING
1/2 block extra firm tofu, crumbled
1/2 cup red wine vinegar
2 teaspoons lemon juice
1/2 teaspoon salt
1 teaspoon oregano
1/4 teaspoon thyme
1/4 teaspoon black pepper
1) Combine salad greens, onion, pepper, tomato, cucumber, olives, and nuts in a large salad bowl.
2) For dressing, mix all ingredients in a bowl and allow tofu to marinate for 1 hour.
3) Pour prepared dressing over salad and toss to coat.
