Green Potato Soup (WFPBNOGF)*

Ingredients

1 large onion, coarsely chopped

6 cups water

2 leeks, washed and sliced (white part only)

4 medium potatoes, peeled and coarsely chopped

1/4 cup soy sauce

2 cups tightly packed washed and dried fresh spinach

Freshly ground pepper to taste

Directions

Place the onion in a large pot with 1/2 cup of the water. Cook, stirring, until the onion softens slightly. Add the remaining water, leeks, potatoes, and soy sauce. Bring to a boil. Reduce the heat, cover, and cook about 35 minutes. Add the spinach, stir well, and cook for another 2 minutes. Puree the soup in batches in a blender. Return to the pan and season with pepper.
