Scrub potatoes and cut in half lengthwise (leave skin on). Place cut side up on cookie sheet. Preheat oven to 375 degrees F.

1 large baking potato for each person
1/4 lb. Earth Balance "butter" stick
1 tsp. thyme
1 tsp. basil
1 tsp. sage
Melt butter over low heat, meanwhile grinding the herbs. When butter is melted, add herbs and cook over low heat for 3 or 4 minutes. Lightly poke small holes in the cup side of the potatoes (5 or 6 per half potato). Brush each potato with the herb butter and place into oven. Bake until desired tenderness is reached.
Add more butter to remaining butter and herbs and melt. Serve in a bowl.
