Homemade Granola (WFPBGF)


Prep Time

20-30 minutes

Prep Notes

 Preheat oven to 325 degrees. Line two baking sheets with parchment or no-stick silicone sheets and set aside.



Cooking Time

30 minutes stirring every 10 minutes

Yields

two large cookie sheets of baked granola

Ingredients

6 cups old-fashioned oats

1 cup chopped walnuts

1 cup chopped pecans

1 cup sliced almonds

1 cup hazelnuts

1 cup bran

2 cups shredded coconut

4 teaspoons ground cinnamon

1 teaspoon ground nutmeg

1/2 teaspoon ground cloves

1/4 cup canola oil or walnut oil

1/4 cup maple syrup

1/2 cup honey

4 teaspoons pure vanilla extract

1-1/2 cup dried cranberries (or a combination of dried fruits you enjoy)


Directions

1. In a large bowl, combine the oats, nuts, bran, coconut, and spices. Set aside.

2. In a small saucepan, heat the oil. Add maple syrup, honey, brown sugar, and vanilla extract, and mix well. Pour over dry ingredients and toss well.

3. Spread the granola on the prepared pans and bake for about 30 minutes, stirring every 10 minutes and switching the pans top to bottom shelves of oven each time you stir.

4. Remove from the oven and allow to cool.

5. Mix in cranberries, raisins, and/or other dried fruit.

6. Stir in an air-tight container.

Notes

To lessen the sugar, you can halve the honey, maple syrup, and the dried fruit, if you like. To up the protein and fat, you can increase the nuts. To lessen the protein and fat, you can lessen the nuts and coconut and add more fruit.
