Ingredients

1 cup of dry garbanzo beans

2 cups of water

2 garlic cloves

1/2 tsp of salt

1 tsp of cumin

juice of 1/2 a lemon

Directions

First thing you want to do is rinse your dry garbanzo beans really well. A clean garbanzo bean is a happy garbanzo bean.


Combine the beans and water in the PC and cook for 60 minutes on the manual setting, high pressure. Don't forget to move the steam release handle to 'sealing'. 


When the time is up, use the quick release method to release the steam immediately. We cook the garbanzo beans a little bit longer than is recommended to make sure they are nice and soft.


Place the garbanzo beans in a high speed blender along with the remaining ingredients. Make sure you pour in the water that was left over after cooking the beans, don't throw it down the drain!


Blend that lovely mixture on high until creamy smooth. Enjoy!

Notes

When using dry beans, make sure to rinse and sort through the beans for any pebbles or small rocks. Chomping down on one of these could be very painful and send you to the dentist. Ouch!
