Italian Dressing (WFPBNOGF)

This easy and quick Italian dressing is oil free and full of flavor.

Ingredients

1 cup low-medium vegetable stock

1/4 cup red vinegar

1 tablespoon Dijon mustard

1-1/2 teaspoons agave nectar

3 garlic cloves, minced

1 teaspoon Italian Seasoning (see recipe under Notes below)

1/4 teaspoon sea salt

1/4 teaspoon black pepper

1/8 teaspoon paprika

1/8 teaspoon xanthan gum, plus more as needed

Directions

  1. Place all the ingredients in a blender and blend on high speed for 5-10 seconds.
  2. Add more xanthan gum slowly if you like your dressing thicker. Be careful with xanthan fum; it only requires a pinch to thicken the dressing.

Notes

This is my favorite blend of Italian seasonings. It's great in marinara sauces, pizzas, and salad dressings. Try sprinkling some on fresh tomatoes and garden vegetables. Yields 5 tablespoons; Prep time: 5 minutes Cook Time: 0 minutes


1 tablespoon dried oregano

1 tablespoon basil

1 tablespoon dried rosemary

1 tablespoon dried thyme

1 tablespoon dried majoram

Mix all ingredients and store in an airtight container in a cool, dry place.
