Lime Mousse (WFPBNOGF)

From Prevent and Reverse Heart Disease by Caldwell B. Esselstyn, Jr., M.D. this is FABULOUS alone, topped with fruit of any kind or as a frosting on cake. It is fast to make at the last minutes. Use more or less lime according to taste. It is beautiful served in dessert or wine glasses topped with fresh berries and sprinkled with mint.

2-4 servings

Ingredients

  • 1 package (12.3 ounces lite firm, firm or extra firm silken tofu. (I even use the 16 oz. regular tofu from Costco here in Madison, and it works just fine)
  • 1/3 to 1/2 cup (depending on the size of the tofu you are using) maple syrup or other sweetener of your choice
  • 3 - 4 Tablespoons fresh lime juice
  • Zest of one lime

Directions

  • Blend tofu, sweetener, lime juice and zest in a food processor until very smooth. Keep scraping down the sides of the processor to blend completely.
  • Refrigerate until chilled.

Notes

My picture above is a close-up of my chosen fruit (purchased in the freezer department of Costco): thawed mango, strawberries, blueberries and tart cherries. This treat is so good for us! Served with a salad before, we have a complete meal. You'll want seconds and have no guilt with this dessert!
