Lorilee's Chili (WFPBNO)


Prep Notes

Gather your mise en place deciding whether you will used canned or soaked and pressure cooked beans. Plan ahead!

Yields

8 servings

Ingredients

3 - 15 ounce cans of red kidney beans or 2 cups dried and soaked kidney beans (feel free to have half adzuki beans with the kidney beans as it's always fun to mix your beans. Adzuki beans are high in protein!)

5-6 garlic cloves, minced

8 stalks chopped celery

2 large onions, either red or yellow or one of each!

1 to two 64 ounce bottles of low sodium tomato juice 

1-2 cans fire roasted diced tomatoes

1 poblano pepper

1 green pepper

2 tbsp chili powder

1/4 tsp dried chili peppers or 1 fresh jalapena pepper

2 tsp dried cilantro or wait until the end and toss in 1/2 cup fresh cilantro

1 - 2 tsp salt to taste

1/2 tsp pepper

1/2 tsp cinnamon

1-2 tsp cane sugar

1-2 small cans or 1 larger can of chopped chilies 



Directions

1. In large stockpot, saute chopped celery, onion, and fresh peppers adding peppers last as you saute. 

2. Add seasonings and tomato juice. Cook for at least 45-60 minutes. 

3. Add red beans.

4. Serve and enjoy!
