Molasses Almond Butter Energy Balls

Try making this with your mixer. It's so much easier and faster to stir thoroughly than by hand.

Yields

Depends on the size of your balls, but about 12 to 15 if using a melon baller spoon.

Ingredients

1 cup old fashioned oats 

1/2 cup flax meal

1 tablespoon chia seeds

1/2 teaspoon cinnamon

1/4 teaspoon ground ginger

2/3 cup almond butter (any nut butter works)

3 tablespoons blackstrap molasses*

3 tablespoons maple syrup (optional: add more *molasses* if you prefer the iron to the syrup)

1/3 cup cocoa nibs 

1/2 cup chopped walnuts (optional)


Directions

In a large mixing bowl, stir together the dry ingredients. Then mix in the wet ingredients and stir until well combined using your hands or a melon baller.

Store in a sealed container in the fridge.

Notes

These save in the fridge for 2 weeks. (Good luck making them last that long as they are so delicious!) 

Mini chocolate chips can be substituted for the cocoa nibs or omitted all together, if you prefer.
