Oatmeal Raisin Cookies (WFPB)

Makes 2.5 dozen small cookies

Ingredients

1 cup your favorite vegan butter or margarine

1/2 cup granulated sugar

1/2 cup coconut sugar or dark brown sugar, firmly packed

1 Tablespoon + 1 teaspoon molasses

2 teaspoons vanilla

Ener-G egg replacer for 2 eggs, mixed with water or make with 2 flax eggs 

1 teaspoon cinnamon

1 teaspoon baking soda

1/2 teaspoon salt

3 cups rolled oats

1 cup raisins*

Directions

  1. Preheat oven to 350.
  2. In a large mixing bowl, beat marganrine, sugar, molasses, and vanilla until light and fluffy. Add egg replacer and beat until well blended.
  3. In another bowl, combine flour, cinnamon, salt and baking soda. Gradually add to the wet ingredients and mix until well combined. Stir in oats and raisins. If using nuts, also stir those in.
  4. On a baking sheet lined with parchment, drop dough by large spoonfulls, pat down slightly, and bake 11-13 minutes. Let stand 3 minutes before removing from baking sheet.

Alternative Ingredients:

"Try using currants, chocolate chips, chopped dried apricots, walnuts, pecans, shredded coconut, or combinations of all of them!
