Thaw a 10 oz. package of spinach.
Preheat oven to 350 degrees
Place the sun-dried tomatoes in a small bowl and add enough warm water to cover. Set aside to soak until tender, about 30 minutes. Drain well.

1/2 cup sun-dried tomatoes (not packed in oil)
1 (12-ounce) package firm or extra-firm silken tofu
1 (10-ounce) package frozen spinach, thawed
1 medium yellow onion, small dice
2 cloves garlic, minced
1 tablespoon dried dill
2 tablespoons nutritional yeast
sea salt and freshly ground black pepper, to taste
2 (12-inch) precooked whole-grain or sweet potato pizza crusts
1/2 medium red onion, small diced
1 cup pitted kalamata olives, halved
I like a pizza that kicks with flavor, and this one does it for me. The creamy sauce is rich without the added fat that is in most cream sauces, and the sun-dried tomatoes and olives add a perfect tangy-salty punch. -- Del Sroufe, FOK Chef
When I get a hankering for pizza, this is my favorite recipe. It's fast, easy, and oh so tasty! It hits the spot.
