Sauce:
1 box Mori Nu Silken Tofu (12.4 ounces)
1/2 cup water
3 Tablespoons fresh lemon juice (included zest from the lemon)
3 Tablespoons low sodium tamari
2 Tablespoons tahini
2 cloves garlic
1 inch piece of ginger (more or less, to taste)
Filling:
1 red onion, minced
1 pound portabella mushrooms, sliced
1 teaspoons oregano
Chopped Italizn parsley, for garnish
Sauce Method: Place ingredients in blender and blend until smooth.
Filling Method: saute onion until translucent. Add mushrooms and saute until they become limp and moisture has evaporated. Stir in oregano. Pour sauce over and mix well. Garnish with fresh parsley.
