Raisin Walnut Bread (WFPBNO)

Preheat oven to 350 degrees.

Yields

1 loaf

Ingredients

2 cups whole wheat pastry flour

1 teaspoon baking powder

1 teaspoon baking soda

1/4 cup maple syrup

1 cup nondairy milk

1 small banana, mashed

1 cup raisins

1/2 cup walnuts

Directions

1. Combine the flour, baking powder, and baking soda in a large mixing bowl. Add the syrup, milk, banana, raisins, and walnuts. Stir just enough to mix. The batter will be fairly stiff and sticky.

2. Spoon into a 9 x 5 nonstick loaf pan and bake for 45 minutes. Remove the pan from the oven and place on a rack to cool.
