Trim the bok choy and set it aside. Spray a wok with nonstick cooking spray and place it over high heat.

3 pounds baby bok choy
2 sliced ginger, peeled and chopped (2 tablespoons)
1 garlic clove, chopped
1 tablespoon water
1 tablespoon rice wine vinegar
salt
1 teaspoon toasted sesame seeds
Add the ginger and garlic to the pre-heated wok with nonstick cooking spray and place it over high heat. Add the ginger and garlic. Begin to stir-fry. Add the baby bok choy, water, vinegar, salt, and toasted sesame seeds. Toss well and serve immediately.
