3-4 buttercup squash (depending on their size)
Grain of choice (brown rice, stuffing, quinoa)
1 pound Sunshine Burgers (breakfast flavor)
1 red onion
2 cups chopped celery
2 cups chopped mushrooms
1 cup chopped fresh Italian parsley
Preheat oven to 400 degrees f. Cut squash in half and bake, cut side down, on a Slipat (or non-stick pan) approximately 40 minutes, until soft. Remove seeds. Scoop out squash, leaving a 1/4" border, and place in a large bowl. Prepare grain of choice according to package directions. In a large pan, water saute onion, celery and mushrooms until soft, about 10 minutes. Add sausage substitute and saute until browned. Add to squash and mix well. Stir parsley. Add desired amount of grain to squash mixture. Fill squash halves with the stuffing mixture. Bake for another 30 minutes until browned.
