Sweet Potato Peanut Soup (WFPBNOGF)

Ingredients

2 medium onions

1 red pepper or 1 jar Roasted Red Peppers

2 cloves garlic

2 medium sweet potatoes, 1/2 inch cubes

1/2 tsp curry powder (I mix Penzey's Hot with Penzey's Now Curry...the hot gives it a mild kick and is delicious)

1/4 tsp red cayenne pepper powder

4 cups vegetable broth

2 tbsp peanut butter

2 cups packed baby spinach

 salt and pepper to taste

Directions

Saute onion, pepper and garlic till soft.

Add potato, curry and cayenne pepper. Cook 10 minutes.

Add broth and simmer 20 minutes or until sweet potato is tender. Stir in peanut butter until it melts.

Add spinach and salt and pepper.

Blend 1/2 the stew in a blender until creamy; then add to the stew and stir well. Serve!

Notes

Three hungry people can polish this entire recipe off. Enjoy its deliciousness. Perfect for a cold day.
